Back when this problem became aware in the PS3's early days people were begging for an update to be release for this bug, however I've never seen any kind of update for ANY PS2 game specifically, only the PS2 System Data download.
I'm not sure what exactly triggers the boss's health to freeze up though. I've read that this is a glitch that is caused by the PS3's PS2 emulator, so maybe there could possibly be a certain CONFIG file that could be used to get past this part.
